This makes a very colorful, tasty and healthy soup. You could also add grilled shrimp for more protein.

Recipe Ingredients for Roasted Pepper Soup

2 yellow bell peppers, seeded and halved
2 red bell peppers, seeded and halved
1 onion, chopped
3 cloves garlic, minced
3 cups low sodium chicken stock
2 tsp extra virgin olive oil
2 tbsp chives, chopped

Recipe Directions for Roasted Pepper Soup

  1. Brush the peppers with a little oil and roast in a hot oven until skins are blackened and blistered. Place in a plastic bag for 15 minutes. Peel and coarsely chop.

  2. Add the rest of the oil to a pot and sautee the onions and garlic for a few minutes. Add the chicken stock and cook 10 minutes. Add the peppers and cook another 10 minutes.

  3. Put mixture in a food processor and pulse until the mixture is smooth. Return to the pot, season with pepper. Serve garnished with chopped chives.
