Great snack. Tortillas and peppers with beans.

Recipe Ingredients for Roasted Pepper Rollups

15 oz white kidney beans, drained
4 oz reduced fat cream cheese, softened
1/4 cup fresh basil
1 tbsp fat-free milk
2 cloves garlic, quartered
1/8 tsp freshly ground black pepper
1/3 cup red sweet peppers
6 flour tortillas
1 cup spinach leaves

Recipe Directions for Roasted Pepper Rollups

  1. For the filling, in a blender or food processor bowl, combine the beans, cream cheese, basil, milk, garlic, and black pepper. Cover and blend or process until smooth. Stir in roasted sweet peppers.

  2. To assemble, spread about 1/3 cup of the filling evenly over each tortilla to within 1/2 inch of the edges/ Arrange spinach leaves over filling to cover. Carefully roll tortillas up tightly. Cover and chill for 2-24hrs.
