Recipe Ingredients for Roasted Pepper Relish

4 bell peppers (assorted colors, such as red, yellow, and orange)
1/4 cup chopped fresh basil
2 tablespoons chopped pitted kalamata olives
1 tablespoon balsamic vinegar
1 teaspoon chopped fresh thyme
1 1/2 teaspoons olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper

Recipe Directions for Roasted Pepper Relish

  1. Cut bell peppers in half lengthwise; discard seeds and membranes. Place pepper halves, skin sides up, on a foil-lined baking sheet; flatten with hand. Broil 15 minutes or until blackened. Place in a zip-top plastic bag; seal. Let stand 15 minutes. Peel peppers; remove and discard seeds. Cut peppers into 1/2-inch pieces.

  2. Combine bell peppers and remaining ingredients in a medium bowl; toss well.
