Whole grain pasta salad with basil, arugula and roasted red peppers.

Recipe Ingredients for Roasted Pepper Pasta Salad

7 oz pasta, multigrain; 1/2 box
2 red peppers, jarred roasted; patted dry
1 clove garlic, halved
1 tbsp flaxseed oil
1 tbsp balsamic vinegar
1/2 c low-fat plain yogurt
1/4 c fresh basil leaves
4 c baby arugula
2 oz Parmesan cheese, shaved

Recipe Directions for Roasted Pepper Pasta Salad

  1. Prepare the pasta according to package directions. Rinse with cold water and drain.

  2. Meanwhile, puree the peppers, garlic, oil, and vinegar in a blender until smooth. Add the yogurt and pulse until blended. Place yogurt mixture in a large bowl. Cut the basil into thin strips. Add the pasta and basil to the yogurt mixture, tossing to coat.

  3. Arrange the arugula on 4 salad plates. Top arugula with of the pasta mixture. Top pasta with of the cheese.
