Recipe Ingredients for Roasted Pepper, Feta and Lentil Salad

1/2 pound dry lentils , rinsed and picked over to remove debris
6 cup water
1/4 cup balsamic vinegar
1 red peppers, roasted and diced
1/3 cup basil, fresh, chopped
1/8 tsp table salt, to taste
1/8 tsp black pepper, to taste
2 tsp olive oil
1/4 cup feta cheese, crumbled

Recipe Directions for Roasted Pepper, Feta and Lentil Salad

  1. Place lentils in a large saucepan and pour in water. Set pan over high heat and bring water to a boil. Reduce heat, partially cover and simmer until lentils are tender, about 30 minutes.

  2. Drain lentils and transfer to a large bowl.

  3. Add vinegar and oil; toss to combine.

  4. Add peppers and basil; toss to combine.

  5. Season to taste with salt and pepper.

  6. Spoon into 4 shallow bowls; top each with 1 tablespoon of feta.

  7. Serve warm or chilled. Yields about 3/4 cup per serving.
