A really nice fall soup, even nicer when garnished with a little crumbled stilton, but that isn't included in the calories-per-serving for this recipe.

Recipe Ingredients for Roasted Pear-Butternut Soup

2 tsp olive oil
2 pounds butternut squash, peeled and cubed
3 medium pears
1 large onion
1 red bell pepper
5 cloves garlic
4 cups water (or vegetable stock)
1 tbsp fresh ginger, grated
1/2 tsp cinnamon
1/4 tsp cloves
1/8 tsp cardamom

Recipe Directions for Roasted Pear-Butternut Soup

  1. Roast the squash, pears, onions, bell pepper, and garlic on a cookie sheet lightly brushed with olive oil.

  2. Place the roasted veg and fruit in a pan with water or vegetable stock. Bring to a boil and add the ginger, cinammon, cloves, and cardamom. Simmer on low heat for 15 minutes.

  3. Puree soup, return to the pan and gently reheat before serving, if necessary.
