The maple syrup is optional. If you use it, add just enough to coat, not drown.

Recipe Ingredients for Roasted Parsnips and Pears

1 pound parsnips, peeled and sliced into 1/4-inch-thick rounds
1 bosc pear, peeled, cored, and sliced
2 tsp olive oil
2 tsp maple syrup
1/4 tsp cinnamon (or to taste)
1/8 tsp cardamom (or to taste)

Recipe Directions for Roasted Parsnips and Pears

  1. Gently toss the parsnips and pears with the remaining ingredients, adding salt and pepper to taste.

  2. Roast in a 400 degree oven.
