Roasted Onion Soup - 6 - 1cup servings

Recipe Ingredients for Roasted Onion Soup

28 oz beef broth
14 oz chicken broth
1 1/2 pounds onion
3 tbs oil
1 Black pepper to taste
2 cup Melba Toast
3 ounces mozzarella,part skim low miosture cheese

Recipe Directions for Roasted Onion Soup

  1. Slice 1 1/2 lbs of onions. Place on large baking sheet or roasting pan. Sprinkle oil and pepper over onions and toss to mix.

  2. Place in 400 degree oven for 20 minutes. Stir occasionally. Reduce temperature to 300 degrees and roast for 20 minuttes or until onions are browned. Reduce heat if onions statr to burn. Stir occasionally.

  3. In large suace pan place roasted onions and broth.Bring to boil. Simmer for 5 minutes.

  4. Place toast on baking sheet.

  5. Place 1 TBS mozzarella cheese on tast.

  6. Place in 300 degree oven till cheese is melted.

  7. Ladle soup into 6 bowls.

  8. Place 1 tast with melted cheese in each bowl and serve.
