Broccoli, Cauliflower & Carrots roasted to perfection.

Recipe Ingredients for Roasted Mixed Vegetables

2 cups broccoli
2 cups cauliflower
1 cup diced carrots
2 tbs. olive oil
1 tbs. Italian Seasoning

Recipe Directions for Roasted Mixed Vegetables

  1. Place broccoli, cauliflower & carrots in ziplock bag. If you use baby carrots - cut them in half so they are small chunks (about 2 inches long).

  2. Add in olive oil & Italian Seasoning (or garlic rosemary seasoning if you can find it).

  3. Seal bag and shake to coat the vegetables- don't worry if they don't seem all the way coated, it will be fine.

  4. Roast in oven at 450 for 15 minutes or 400 for 20 minutes, depending on what else you are making that night.

  5. Even good enough for company.
