A delicious side dish for any dinner from meatloaf to any roast

Recipe Ingredients for Roasted mashed butternut squash

4 1/2 lbs butternut squash, diced
1 tbsp salt
1/2 tbsp black pepper
2 tbsp olive oil
1 tbsp sage
1 tbsp butter
1/2 cup skim milk

Recipe Directions for Roasted mashed butternut squash

  1. Preheat your oven to 400 degrees Fahrenheit.

  2. Peel, seed and dice a large butternut squash. (I used 1 medium and 1 small for my preparation)

  3. In a large bowl coat with the olive oil, salt, pepper and sage.

  4. Place on a large sheet or roasting pan and into the oven for 50 minutes, turning with a spatula at 20 minutes.

  5. In a small sauce pan melt the butter in the skim milk.

  6. When the squash is done roasting. (Fork tender and browning in the corners) remove from oven and place in a large pot.

  7. With a potato masher mix the milk mixture into the squash.

  8. Serve warm.
