A whole chicken roaster stuffed with lemons, baked, and served with brown rice.

Recipe Ingredients for Roasted Lemon Chicken with Brown Rice

4 lb chicken roaster
5 lemons
1 large onion
2 cloves garlic
1 tsp sea salt
1 tsp pepper
1 tblsp rosemary
2 cups brown rice (cooked)

Recipe Directions for Roasted Lemon Chicken with Brown Rice

  1. Preheat oven to 350 degrees

  2. Chop onion and garlic

  3. Rinse chicken and salt and pepper inside

  4. Take a fork and pierce each lemon several times

  5. Squeeze one lemon over the exterior of roaster

  6. Stuff lemons (with skins on), onions, and garlic inside cavern of roaster

  7. Spread rosemary over exterior of chicken

  8. Place chicken in roasting pan and bake in oven for 45 minutes to an hour

  9. Remove lemons, onions, and garlic from interior of chicken

  10. Cut chicken into two thighs, drumsticks, breasts, and two wings. Split each breast into two pieces

  11. Squeeze remaining lemon juice, onions, and garlic over chicken pieces

  12. Serve with brown rice and your choice of vegetables
