Salmon filets with an herb marinade roasted on a bed of onions and tomatoes.

Recipe Ingredients for Roasted Herbed Salmon

16 oz. Salmon, uncooked
2 T. Dijon mustard
2 T. lemon juice
1 T. thyme, minced
1 T. rosemary, minced
1 t. oregano, dried
1/2 t. salt
1/2 t. ground black pepper
1 yellow onion, small
2 tomatoes, thinly sliced

Recipe Directions for Roasted Herbed Salmon

  1. Make three to four 2" clits about 1/4" deep and evenly spaced along the top of each salmon filet.

  2. In a shallow dish, whisk together the mustard, lemon juice, thyme, rosemary, oregano, salt and pepper.

  3. And salmon and turn to coat both sides. Remove from the marinade and set marinade aside. Place salmon filets in a clean dish, cover and refrigerate 15 minutes.

  4. Preheat the oven to 450 degrees.

  5. Coat a shallow baking pan with cooking spray.

  6. Slice onion and tomatores and arrange in the bottom of the prepared dish and place salmon on top.

  7. Pour remaining marinade over salmon.

  8. Bake for 10-15 minutes or until fish is fork tender.
