Recipe Ingredients for Roasted Herb Potato Wedges

6 tsp Classic Dijon Mustard
1 1tsp Olive Oil
1 tablespoon Rosemary
1 tablespoon Oregano
1 tbsp Parsley
0.5 tsp Salt, Table
0.25 tsp Pepper, Black

Recipe Directions for Roasted Herb Potato Wedges

  1. Preheat oven to 425 degrees.

  2. With a whisk, combine all ingredients - 2 T Mustard, Olive Oil, Chopped Rosemary, Chopped Oregano, Chopped Parsley, salt & pepper - in a small bowl.

  3. Chop potatoes into wedges or cubes. Add to mustard mixture and stir with a spatula coating potatoes well.

  4. Pour onto a baking pan coated with cooking spray. Bake, turning occasionally, until potatoes are tender, about 25 to 30 minutes.
