Recipe Ingredients for Roasted Heirloom Tomato Soup

2.2 Medium Tomatoes
2 cup Organic Cherry Tomatoes
8 cloves, raw Garlic
3 1tsp Olive Oil
12 leaves Basil, Fresh
2 oz Red Peppers
1 medium raw Onion Red
2 tbsp Omega Plus Buttery Spread
1 tbsp Soy Sauce
4 fl oz Original Almond Breeze Unsweetened
1 serving Sea Salt
0.5 tsp Crushed Red Pepper
28 oz Fire Roasted Diced Tomatoes
1 cup Organic Vegetable Broth

Recipe Directions for Roasted Heirloom Tomato Soup

  1. cut tomatoes and place on baking sheet with olive oil, salt and pepper.

  2. Take garlic head and cut off top. Wrap in tin-foil and pour tspn oil over it. place in middle of baking sheet with tomatoes. Bake for 45 minutes at 400 degrees.

  3. in a stock pot, sauté chopped onions with oil, crushed pepper flakes and butter. When onions start to brown add basil, canned tomatoes, and broth.

  4. After tomatoes and garlic are roasted add tomatoes with baking juice and squeeze in roasted garlic and a bit of soy sauce. Bring to a boil, then turn heat down and let simmer, uncovered for at least 40 minutes. Slowly add in almond milk and extra spices to taste.
