A pretty-to-look-at soup with all the colors of the Heirloom tomatoes plus the thinly sliced onions and garlic. And, when spooned over a piece of toasted wheat bread that has been rubbed with fresh garlic on both sides, it is extremely tasty and hearty. Each serving: 388 grams/13.69 ounces (approx. 1 1/2 cups) for 207 calories, which includes the bread.

Recipe Ingredients for Roasted Heirloom Tomato/Onion & Bread Soup

4 cups thinly sliced onions
2 tablespoons olive oil
4 cups chopped tomatoes (Heirloom cherries or regular Heirloom) (Regular tomatoes can also be used)
1/2 cup thinly sliced garlic
4 cups low sodium chicken broth (same as 32 oz box)
6 slices whole wheat bread
2/3 cup chopped fresh basil
6 tablespoons shredded Parmesan cheese (finely shredded)

Recipe Directions for Roasted Heirloom Tomato/Onion & Bread Soup

  1. Preheat oven to 450 degrees

  2. Slice the onions while the oven heats

  3. Toss the sliced onions in the oil, sea salt and pepper in a 9" x 13" pan

  4. Roast the onions in the oven for 10 minutes; stir them and continue to roast for additional 10 minutes

  5. Add the chopped tomatoes and the 1/2 cup sliced garlic to the onion mixture and continue roasting for an additional 20 minutes (stirring once or twice). When the tomatoes begin to fall apart and begin to brown in spots, transfer all to a large saucepan.

  6. Add the broth and simmer over medium heat.

  7. Turn off heat and cover to keep warm OR refrigerate.

  8. When ready to serve, reheat if necessary.

  9. Toast bread in oven or toaster; rub with fresh garlic on both sides of the toast and place in shallow soup plate/bowl. Add fresh basil and sprinkle 1 tablespoon Parmesan cheese on top before serving.
