Recipe Ingredients for Roasted Grilled Vegetables on Petit Pans with Garlic Pesto Butter

2 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
2 medium raw Onion Red
2 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
10 grams Garlic
5 Medium Tomatoes
500 grams Mushrooms, Portabella
4 tbsp Olive Oil
1 Tablespoon Basil

Recipe Directions for Roasted Grilled Vegetables on Petit Pans with Garlic Pesto Butter

  1. Slice 2 eggplants in half lengthwise, remove top greens, and score flesh with knife in criss-cross pattern. Cut tops off peppers. Peel skin off onions.

  2. Place eggplants (skin side up), whole peppers, whole skinned onions, unpeeled garlic cloves, and tomatoes on grill pan. Brush with olive oil and sprinkle with salt. Bake approx. 20-30 min until skin on eggplants has "collapsed", peppers' skin is slightly brown, garlic/onions are soft, etc. Allow to cool, then slice onion layers and remove garlic from paper. Cut tomatoes, eggplant and peppers into slices.

  3. Before serving, spoon out veggies (enough for desired number of sandwiches at one time) onto grill pan and place under grill for 5-10 minutes as desired to heat and "crisp."

  4. Spread 1 tsp on each side of petit pan or rustica style Italian bread. Crush roasted garlic with back of spoon into bread if desired. Spoon vegetable slices onto bread either as closed or open faced sandwiches. Add parmesean if desired.
