Roasted green beans are awesome! If using a dark nonstick baking sheet, line with foil first. I used a stoneware bar pan which worked beautifully.

Recipe Ingredients for Roasted Green Beans and Red Onions with Almonds

2 lb fresh green beans, ends snapped off
1 large red onion, cut into 1/2-inch wedges
2 T olive oil
1 t salt
1/2 t black pepper

Sauce:
2 T balsamic vinegar
2 t honey
2 t fresh thyme, minced
2 cloves garlic, thinly sliced
1/3 c almonds, toasted and chopped

Recipe Directions for Roasted Green Beans and Red Onions with Almonds

  1. Adjust oven rack to middle position; preheat to 450 degrees. Put beans and onion wedges in large bowl. Drizzle olive oil and sprinkle with salt and pepper. Mix thoroughly and spread into layer on baking sheet. They will cook faster if not crowded so use two sheets if you like. Roast 10 min.

  2. While beans/onions are cooking, combine vinegar, honey, thyme, and garlic in a small bowl.

  3. After 10 min, remove beans from oven and place back into large bowl. Pour in vinegar/honey mixture and mix thoroughly. Put back onto baking sheet and continue to cook and stir every 5 minutes or so until beans/onions are dark golden brown in spots and beans have started to shrivel, 10 - 25 minutes total. When cooked, put into serving dish, sprinkle with chopped almonds and mix well. Can use other favorite nuts if you prefer.
