Sweet Potato and Roasted Garlic Soup

Recipe Ingredients for Roasted garlic and sweet potato soup

3 large Sweetpotato
6 clove Garlic
1 serving President's Choice Blue Menu Chicken broth
1 serving Cream Cheese Light Garden Vegetable
1 tbsp Olive Oil

Recipe Directions for Roasted garlic and sweet potato soup

  1. preheat oven to 400

  2. cut top off a head of garlic and place on a square of tinfoil drizzle with olive oil and wrap tightly

  3. wash sweet potatoes and pierce

  4. roast the garlic and sweet potatoes for an hour

  5. scoop flesh from sweet potatoes into a medium sauce pan

  6. add 1 carton of low sodium chicken broth and heat through

  7. squeeze the roasted garlic into the soup

  8. once heated through puree soup with a hand blender

  9. add 2 tbsps of herbed cream cheese and melt into soup.

  10. Season to taste
