ROASTED GARLIC STUFFED MUSHROOMS

Recipe Ingredients for ROASTED GARLIC STUFFED MUSHROOMS

10 garlic cloves
1 tablespoon olive oil
15 mushrooms, 2 inch diameter
1 teaspoon butter
1/2 cup breadcrumbs
1 tablespoon parmesan cheese
1 tablespoon chopped fresh parsley

Recipe Directions for ROASTED GARLIC STUFFED MUSHROOMS

  1. Cut the stems from the mushrooms and chop the stems. In a skillet saute the chopped stems in 1 teaspoon of oil and 1 teaspoon butter about 3 minutes.

  2. Add breadcrumbs and cook about 5 minutes.

  3. Remove from heat and mix in parsley and parmesan cheese.

  4. Separate the cloves of the cooked bulb of garlic and squeeze the paste from them into a bowl.

  5. Using a fork, mash enough garlic to measure 2 tablespoons.

  6. Add the oil from the Roasted Garlic Express. Stir garlic mixture into chopped mushroom mixture. Season with salt and pepper.

  7. Brush mushroom caps with olive oil. Place rounded side down on a baking sheet. Spoon filling into mushrooms.

  8. Bake in a preheated 375 degree oven for 20 minutes
