Recipe Ingredients for Roasted Garlic Red Skin Mashed Potatoes

1 1/2 lbs red potatoes
1/4 cup fat free milk
1/4 teaspoon salt
3 garlic cloves
2 tablespoons light margarine
1 dash of black pepper

Recipe Directions for Roasted Garlic Red Skin Mashed Potatoes

  1. Cut potatoes into chunks.

  2. In 2 quart saucepan, add potatoes and cover with water.

  3. Bring to a boil over high heat.

  4. Reduce heat to low and simmer 20 minutes or until potatoes are very tender; drain.

  5. Meanwhile, in 8 inch nonstick skillet, heat over med-low heat. Add garlic and cook, turning occasionally 15 minutes or until garlic is tender and skin is golden. Remove garlic, peel, then finely chop.

  6. Mash potatoes then stir in garlic and remaining ingredients.
