It?s hard to believe there is only a small amount of cream and no meat at all in this intensely flavored pureed soup. Roasting the garlic and onions mellows their sharpness while bringing out a concentrated savory meaty flavor. This soup is a great example of the fifth taste or umami.

Recipe Ingredients for Roasted Garlic and Onion Soup

20 clove Garlic
440 grams Onion Yellow
1.5 serving Extra Virgin Olive Oil
10.6 tbsp Cream, Fluid, Half And Half
8 cup Vegetable Stock
1 tablespoon Sage
1 tablespoon Thyme
1 serving Balsamic Vinegar

Recipe Directions for Roasted Garlic and Onion Soup

  1. Preheat oven to 350 degrees F.

  2. Place peeled whole garlic cloves and onion chunks in a roasting pan large enough to hold them in a single layer.

  3. Add the olive oil and toss to coat.

  4. Roast, stirring once or twice, for about 1 hour or until browned and caramelized.

  5. Remove the roasting pan of vegetables from the oven and place over 2 burners on the stove set to medium heat.

  6. Add 2 cups stock and stir to scrape up any browned bits from the roasting pan.

  7. Cook for 5 minutes before transferring contents of the pan to a food processor or blender ? you will need to work in batches.

  8. Puree until smooth then transfer to a large pot over medium heat.

  9. Exercise caution anytime you put hot liquids in a blender or food processor ? never fill more than half full and always use the lid in order to prevent the liquid from shooting out the top and causing burns.

  10. Alternately use an immersion blender to puree the soup right in the pot.

  11. Add remaining stock, sage, thyme, and balsamic vinegar and bring to a simmer.

  12. Remove from heat and stir in the cream.

  13. If eating now, garnish with chives and croutons, if desired, and serve hot.
