Recipe Ingredients for Roasted Garlic-Beet Soup

4 beets (2" dia, sphere) Beets
6 clove Garlic
2 tbsp Olive Oil
1 medium raw Leeks

Recipe Directions for Roasted Garlic-Beet Soup

Roast beets (drizzle w/olive oil/400 degrees/1 hour), Roast garlic in skin (drizzle w/olive oil/400 degrees/30 min), heat 2 TBSP olive oil in pan, add thinly sliced leek, cook 6-8m, add beets, garlic, 1tsp fresh thyme, 1 bay leaf, and 3 c water. Brnig to boil, reduce heat, simmer 5min. Discard bay leaf, let cool slightly, blend until smooth. Stir in 2 Tbsp lemon, season w/salt and pepper.
