This can be used as soup, sauce for pizza or pasta or whatever you want. Great as a soup. Enjoy!

Recipe Ingredients for Roasted Fresh Tomato Sauce

2 pounds tomatoes (cut in half)
1 red onion (roughly chopped)
3 cloves garlic, chopped
1 tablespoon basil or 1 cup fresh basil leaves
1/2 cup white wine
1/4 cup Vinegar Balsamic
1/2 teaspoon oregano
1/2 teaspoon salt
1 dash pepper
2 tablespoon olive oil
1 cup chicken or vegetable broth

Recipe Directions for Roasted Fresh Tomato Sauce

  1. Preheat oven at 400 degrees. In baking sheet put tomatoes, onion, garlic, spices, and olive oil. Use enough olive oil to coat tomatoes. Add balsamic vinegar then roast for approximately 30 minutes.

  2. Saute 1/2 onion and basil, then add tomatoe mixture. Add 1 cup broth, bring to a boil then turn off heat. Puree in blender or food processor. If needed you can add a little more broth till desired consistency.
