Fish and garlic roasted red potatoes

Recipe Ingredients for Roasted Fish with Potatoes

1 pound red potatoes, sliced
3 cloves garlic, minced
2 tablespoons olive oil
1/2 teaspoon salt
1 1/5 pounds orange roughy
4 teaspoons lemon juice
1 tablespoon parsley, chopped

Recipe Directions for Roasted Fish with Potatoes

  1. Preheat oven to 400F. Coat a 9-by-13-inch baking dish with cooking spray.

  2. Toss potatoes with garlic, oil, 1/4 teaspoon salt and a generous grinding of pepper in the prepared pan. Cover with foil and roast until tender when pierced with a knife, 30 to 40 minutes.

  3. Place fish fillets on potatoes, sprinkle with remaining salt, pepper, lemon juice, and parsley. Bake until fish is opaque in the center, 10-15 minutes. Serve with lemon wedges.
