Easy weeknight dinner with fresh fish and vegetables.

Recipe Ingredients for Roasted Fish with Artichokes

2 medium red onions, cut into 1/4" wedges
1/4 c extra virgin olive oil
2 cups artichoke hearts, frozen
1 cup grape tomatoes
2 cups spinach (optional)
2 T parsley, chopped
2 tsp orange zest, grated
2 cloves garlic, minced or pressed
20 oz snapper or tillapia fillets

Recipe Directions for Roasted Fish with Artichokes

  1. Preheat the oven to 400 degrees F.

  2. In a 13" by 9" baking dish, combine the onion and 2 T (1/2) of the oil. Toss to coat and then spread the onion in an even layer.

  3. Roast for about 30-40 minutes, or until onions are very soft. Remove from the oven and stir in the artichoke hearts, tomatoes and spinach. Sprinkle with 1/2 tsp salt.

  4. Increase the oven temperature to 450 degrees. Return the vegetables to the oven. Cook for another 10-15 miuntes or until tomatoes begin to burst.

  5. In a small bowl, mix the parsley, orange zest and garlic. Set aside.

  6. In a shallow baking dish lay the fish fillets in a single layer. Drizzle the remaining olive oil on the fish and toss to coat. Sprinkle the remaining 1/2 tsp salt and 1/2 tsp pepper on the fish. Top the fish with the parsley, orange and garlic mixture.

  7. Place the baking dish with fish into the oven and roasl until the fish flakes easily with a fork (about 5 minutes for thin fillets; 10-12 minutes for thinker fillets.

  8. Divide between 4 plates and serve.
