Recipe Ingredients for Roasted Fennel and Baby Carrots

18 baby carrots
2 fennel bulbs
3 T olive oil
3 T water
1 t fennel seeds
1/4 t ground pepper

Recipe Directions for Roasted Fennel and Baby Carrots

  1. Preheat oven to 450 degrees.

  2. toss carrots and fennel with remaining ingredients on a large baking sheet and spread out in one layer.

  3. Cover pan with foil and roast vegetables for 10 minutes.

  4. Uncover and roast, turning occasionally until vegetables are tender and browned, about 20 minutes more.
