Recipe Ingredients for Roasted eggplant and veggies

1 3/4 pound eggplant
4 large plum tomatoes
2 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons oregano
1 cup green pepper
1 large onion
2 cups cauliflower

Recipe Directions for Roasted eggplant and veggies

Large dice all veggies, toss with olive oil and 2/3 of oregano. Roast at 450 degrees for 40 minutes, stirring occasionally.
