Recipe Ingredients for Roasted Eggplant and Tomato Salad

2 cup, chopped or sliced Tomatoes, Red, Ripe
1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
2 medium (2-1/2" dia) Onions
1/4 cup leaves, whole Basil, Fresh
3 serving Cooking Spray All Varieties
1 tsp Salt, Table

Recipe Directions for Roasted Eggplant and Tomato Salad

  1. Preheat oven to 375. Peel onion and poke multiple holes in eggplant with knife; coat in cooking spray on cookie sheet and roast 30 minutes. Turn and roast another 30 minutes.

  2. Thickly chop 2 cups tomatoes or 2 cups halved cherry tomatoes. Chiffonade basil or use same amount mix of freeze dried and squeezable paste. Mix with tomatoes, salt, pepper, chili powder.

  3. Let eggplant cool, though while still hot slice and thickly chop. Peel outer layer off onion, thickly chop. Mix and serve - tasty warm or cooled. Approx 1/2 cup per serving.
