Great side dish for those who like a little goodness in their belly for a few calories!

Recipe Ingredients for Roasted Eggplant, Squash and Tomato

1 large eggplant, sliced
2 tbls olive oil
1 clove Garlic
5 teaspoons parmesan cheese
1 medium tomato, sliced
2 medium yellow squash

Recipe Directions for Roasted Eggplant, Squash and Tomato

  1. Preheat oven to 400 degrees.

  2. Slice the eggplant into thin slices.

  3. Brush olive oil on both sides of the eggplant and place in a baking dish that has been sprayed with Pam.

  4. Slice tomato and place on the eggplant slice (we are working in layers, so just start with layer one) as desired.

  5. Sprinkle Garlic and Tony's for a kick to taste.

  6. Sprinkle parmasan cheese over layer.

  7. Start with new layer.

  8. Roast for about 35 minutes or so. I always taste test one of the slices to be sure it's done. It changes depending on the thickness of the slice, and the amount of olive oil brushed on.
