An easy quick veggie mix to put on top of whatever carb you like or add broth and turn into a soup.

Recipe Ingredients for Roasted Eggplant and Squash

1 T olive oil
2 small onions (diced)
8 large mushrooms sliced
1 large zuchini (diced)
1 large yellow squash (diced)
14 oz diced tomatoes
3 medium eggplant (roasted)
3 cloves garlic minced
1 salt and pepper to taste

Recipe Directions for Roasted Eggplant and Squash

Saute onion and mushrooms for 5-8 min. add squash and simmer for another 8 min. add garlic and tomatoes with juice and simmer for 5 min. add chopped roasted eggplant and mix well.
