Roasted Eggplant Spread Recipe

A low fat dip or use as a side dish. I put it on my chicken while baking.

Recipe Ingredients for roasted Eggplant Spread

1 large eggplant
2 large sweet red peppers
3 tbs olive oil
1 tbs tomato paste
2 cloves garlic

Recipe Directions for roasted Eggplant Spread

  1. Peal and dice eggplant

  2. Seed and dice peppers

  3. Toss with olive oil , crushed garlic and black pepper

  4. Roast in a preheated 400 degree oven for 45 minutes tossing once while cooking.

  5. Cool slightly and place in food processor...add tomato paste. Pulse 3 or 4 times until blended.
