For all those vegans who need a lil change to the way you typically view eggplant. Very fulfilling.

Recipe Ingredients for Roasted Eggplant Soup

1/2 cup eggplant
1/2 tomato
1/4 cup green onion
1/4 cup celery
1/4 cup bok choy
1/4 cup white flour
1/8 cup lentils

Recipe Directions for Roasted Eggplant Soup

  1. take the eggplant, garlic (optional) you can always add garlic powder instead, tomato, celery, and green onion place on a baking sheet and spray olive oil spray or canola spray over veggies. Place in a preheated 400 degree oven for about 45 minutes. In another pot, place lentils in vegetable stock, if chosen, and keep boiling. Add flour batter: (water, salt, and flour) in the mix: to form small dumplings. You can season up the lentil stock if you want with salt, pepper, and italian seasonings. Take veggies out and scoop out the inside of the eggplant and place in a blender along with the other roasted veggies. Puree until desired consistency. Place eggplant content back on pot and add lentil stock to the mixture. Simmer for 10-15 min.

  2. You can add parmesan cheese (vegan) or goat cheese for those non-vegans.

  3. Very yummy!!!!!
