this is a good topping for pizza with a greek flavor

Recipe Ingredients for roasted eggplant and sesame pizza

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
2 oz Shallots
1 tbsp Toasted Sesame Oil
1 dash Pepper, Black
1 tbsp Sesame Seeds
1 tablespoon Oregano

Recipe Directions for roasted eggplant and sesame pizza

  1. cube eggplant, put in medium bowl.

  2. add remaining ingredients except seed and oregano,

  3. mix together, put on baking sheet and roast about 10 minutes in 450 degree oven.

  4. take dough (recipe in book) and put on oiled pan and bake alone for 5 minutes on bottom rack.

  5. remove dough add eggplant mix on top. sprinkle with seed and oregano, bake 12-15 min. until crust is golden brown. serve.
