Sick and tired of your usual breaded and fried eggplant ... try this healthy option!

Recipe Ingredients for Roasted Eggplant

1 medium Eggplant, 8 slices
1/2 cup onion
4 cups fresh spinach, washed
1 tomato, sliced
1 clove garlic, to taste
2 tbsp olive oil
1 tsp salt, to taste
4 tbsp ricotta cheese

Recipe Directions for Roasted Eggplant

Slice eggplant into equal slices of 8, 2 slices per person and brush on olive oil. Place in roasting pan in a 350 degree oven, broil each side for about 10 min or until lightly brown and soft. Meanwhile sweat onions in remaining olive oil on medium/low heat until opaque and add in garlic and fresh spinach and place a lid on cooking pot. When this is done place this stuffing on top of eggplant, top with tomato slices and 1 tbsp each of ricotta cheese. Place back into oven at 350 to melt the ricotta. Serve with a side of whole wheat pasta or rice! Each slice is about a serving of veggies and don?t forget to add in a side salad!
