Eggplant and red peppers roasted in olive oil with seasonings

Recipe Ingredients for Roasted Eggplant & Peppers

4 c eggplant
2 c red pepper
3 tbsp olive oil
1 tbsp balsamic vinegar

Recipe Directions for Roasted Eggplant & Peppers

  1. Peel and slice eggplant (2 large)

  2. Core and slice red peppers (2 large)

  3. Coat large baking dish with Pam

  4. Toss veggies in oil and vinegar

  5. Sprinkle with Italian seasonings, pepper, salt, etc.

  6. Roast at 400 degrees for 50 minutes or until soft - tossing every 20 minutes.
