Recipe Ingredients for Roasted eggplant and peppers

15 oz Eggplant
1 medium raw Bell Pepper Red
1 medium (2-1/2" dia) Onions
2 tbsp Extra Virgin Olive Oil
2 tsp Oregano, Ground

Recipe Directions for Roasted eggplant and peppers

Partially peel the eggplant, like a cucumber, cut pepper in slices,slice onion. Combine the oil and oregano and pour over vegetables. Cook at 350 degrees for 20 minutes and serve.
