Recipe Ingredients for Roasted Eggplant Patties with Tomato Basil Sauce

10 tomatoes
6 cloves garlic
3 medium eggplant
1/2 T oil
1 cup diced onion
2 oz 2% cheese
1/2 cup bread crumbs
1 egg

Recipe Directions for Roasted Eggplant Patties with Tomato Basil Sauce

  1. blanch tomatoes by dropping in boiling water 10 seconds. saute garlic, add chopped tomatoes, 2 T fresh basil, salt and pepper, simmer 5 min to serve over croquettes.

  2. roast whole eggplant directly over flames on stove, about 5 min. center meat should be soft, or bake at 400 til done. peel and chop meat so there's 3 1/2 cups of eggplant.

  3. saute onion til cooked.

  4. mix all together, with 1 T mint and parsley, salt and pepper., chill about 45 minutes. the mix wont be firm, but should hold together while sauteeing. if it's too loose, add more bread crumbs. shape into 2" patties and dip in flour, sauteeing until golden brown.
