Layered roasted eggplant with tomato sauce and cheese. A vegetarian lasagna.

Recipe Ingredients for Roasted Eggplant Parmesan

1 1/2 cups tomato sauce
2 cups mozzarella cheese
3 large eggplant
1/2 cup parmesan cheese
1/4 cup olive oil

Recipe Directions for Roasted Eggplant Parmesan

  1. Slice eggplant into 1/2 inch slices.

  2. Lay eggplant slices on paper towels, sprinkle with kosher salt and let sit for about 20 minutes. Rinse and pat dry.

  3. Place eggplant slices on jelly roll pan lined with aluminum foil and sprayed with cooking spray. Brush with the olive oil.

  4. Roast in a 375 degree F oven for about 40 minutes.

  5. In a 13 x 9 inch pan, layer eggplant, tomato sauce, mozzarella cheese and parmesan cheese. Repeat layers x 3.

  6. Bake in 350 degree F oven for approximately 10 minutes or until cheese is melted and top is lightly browned.
