Roasted seasoned veggies-perfect for eating with rice or pasta

Recipe Ingredients for Roasted Eggplant and Mushrooms

1 medium eggplant, peeled and cubed
2 small zucchini, cubed
1 small yellow onion, chopped
1 green pepper, chopped
8 ounce mushrooms, sliced
1 1/2 tablespoons tomato paste
2 tablespoons olive oil
1/2 cup water
1 clove garlic, minced
1/2 teaspoon dried basil
1/2 teaspoon dried italian seasoning
1 salt and pepper to taste

Recipe Directions for Roasted Eggplant and Mushrooms

  1. Preheat oven to 450 degrees F (230 degrees C).

  2. Place eggplant, zucchini, onion, green pepper, and mushrooms in a roasting pan.

  3. In a small bowl combine the tomato paste with the water and oil, and stir in spices. Pour over the vegetables and mix well.

  4. Bake for 45 minutes or until veggies are tender, stirring occasionally.
