Recipe Ingredients for Roasted Eggplant, Mushroom, & Red Pepper

117 grams onion, quartered
133 grams mushrooms, quartered
144 grams eggplant, sliced thick and cubed
16 grams garlic, chopped thick
203 grams red papper, cut into 1 inch pieces

Recipe Directions for Roasted Eggplant, Mushroom, & Red Pepper

  1. Preheat oven to 400 degrees.

  2. Chop vegetables and toss.

  3. Place in a foil lined pan sprayed with Pam.

  4. Bake for 30 minuted, stirring every 10 minutes or so.

  5. Stir into pasta sauce or serve immediately.
