Middle Eastern-inspired Roasted Eggplant and Mint Hummous

Recipe Ingredients for Roasted Eggplant and Mint Hummous

240 grams Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds, Canned
1 medium unpeeled raw Eggplant
1 tbsp Sesame Butter, Tahini, From Roasted And Toasted Kernels (Most Common Type)
1 clove Garlic
4 tbsp Extra Virgin Olive Oil
1 oz Mint

Recipe Directions for Roasted Eggplant and Mint Hummous

Grill whole eggplant for 25 minutes until blackened. Remove flesh and leave to cool. In blender combine chickpeas, tahini, garlic and eggplant. Slowly drizzle in the olive oil until a smooth paste forms. Add torn mint leaves and pulse for a few more seconds. Serve with vegetables or toasted pitta bread wedges.
