Recipe Ingredients for Roasted Eggplant Dip

2 eggplants
1 egg yolk
1 small white onion
3 tbs canola oil
1 tsp salt

Recipe Directions for Roasted Eggplant Dip

  1. - Roast whole eggplants under broiler for about 20-25 min- turning every 5 min to ensure full coverage.

  2. - Peel and place in colander to drain until cool

  3. - Chop eggplant coarsely

  4. - mince onion in food processor until very very fine

  5. - add chopped eggplant and process to a thick paste consistency

  6. - in separate small bowl- add egg yolk + 2-3 TBS of eggplant mixture- combine well

  7. - start adding oil in thin stream while beating egg yolk/eggplant mixture

  8. - this will create a mayonnaise type mixture- be sure to keep beating as oil is added to create emulsion

  9. - once completed, add back into eggplant mixture and season w/ salt and pepper to taste
