Roasted Veggies & ricotta cheese

Recipe Ingredients for Roasted Eggplant Dip

2 large eggplant
1 cup part-skim ricotta cheese
10 cloves garlic
1/2 tsp extra virgin olive oil
1 red bell pepper

Recipe Directions for Roasted Eggplant Dip

  1. Preheat oven to 400.

  2. Prick eggplants with fork.

  3. Place garlic & oil in foil and close.

  4. Cut bell pepper in half & remove seeds, stem & pith.

  5. Place all veggies in oven.

  6. When the bell pepper gets black spots - about 10-15 minutes, remove it and place in a ziploc bag.

  7. After the eggplant & garlic have cooked for 45 minutes, remove them.

  8. Cut eggplant in half and scoop flesh into food processor.

  9. Remove skin from bell pepper and add to eggplant.

  10. Add garlic cloves and ricotta.

  11. Process until smooth.
