Yeilds about 1 1/2 cups good on bread, raw vegetables or in sandwhices as spread (ie: instead of mayo)

Recipe Ingredients for Roasted Eggplant Dip

1 Eggplant, medium, peeled
1 red onion, chopped
1 Red bell pepper, chopped
1 tbsp tomato paste
3 tbsp olive oil
3 garlic cloves, minced

Recipe Directions for Roasted Eggplant Dip

  1. mix eggplant, red onion, bell pepper and tomato paste in a bowl.

  2. add olive oil and garlic

  3. put on cookie sheet and bake at 400 degrees for 45 minutes

  4. cool and pulse in food processor to desired consistency
