Recipe Ingredients for Roasted Edamame Salad

2 cup Shelled Edamame
1/2 cup Corn, Sweet, Yellow
1/4 cup chopped Scallions
1 clove Garlic
1 tbsp Olive Oil
0.75 tsp Salt, Table
0.25 tsp Pepper, Black
1 cup, chopped or sliced Tomatoes, Red, Ripe
0.5 cup leaves, whole Basil, Fresh
1 tbsp Vinegar red wine

Recipe Directions for Roasted Edamame Salad

  1. Preheat oven to 400

  2. Place edamame, corn, scallions, garlic, olive oil, salt & pepper on baking pan (stirred.)

  3. roast for 10-15 minutes

  4. allow to cool

  5. Add the tomato, basil & vinegar and toss to combine

  6. Enjoy!
