Inspired by Chipotle's corn salsa, but much fresher tasting!

Recipe Ingredients for Roasted Corn Salsa

4 ear, yields Corn, Sweet, Yellow
2 pepper Peppers, Jalapeno
1.1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
0.3 large Onions
1 lime yields Lime Juice
0.5 tsp Garlic Powder
0.25 cup Coriander Leaves
0.2 cup Olive Oil

Recipe Directions for Roasted Corn Salsa

  1. -Roast corn (on cob, in peel) on the grill for 15+ minutes, turning occasionally.

  2. -Broil or grill poblanos and jalapenos until charred. Then place in a bowl, cover with plastic wrap, and let sit for at least 10 minutes.

  3. -Uncover peppers and use fingers to peel skin off and remove seeds. Chop peppers.

  4. -In a large bowl, sqeeze the juice of one lime. Slowly drizzle in olive oil while whisking quickly. Add salt, pepper, and garlic powder, and whisk again.

  5. -Add chopped poblanos, jalapenos, red onions, red bell peppers, and cilantro. Muddle slightly with whisk to mix flavors.

  6. -Allow corn to cool slightly, then shuck corn, discarding skins. Cut corn off of ears right into the bowl.

  7. -Mix well and enjoy!
