Recipe Ingredients for roasted corn chowder

4 cups corn
1 tbsp olive oil
1 onion, chopped
1 large potato, peeled and diced
4 cups vegetable broth
1 c rice milk
1 tomato, peeled and seeded
2 tbsp basil

Recipe Directions for roasted corn chowder

  1. roast corn at 450 for 25 to 30 minutes

  2. heat olive oil in large pot over medium heat. add onion and celery, cover, and cook util softened, about 5 minutes. add potato and stock and bring to a boil. reduce heat to low, cover, and cook until vegetables are tender, about 25 minutes. uncover, add corn, and cook for 15 additional minutes.

  3. remove from heat, ladle 2 cups into food processor and process until smooth. stir puree back into chowder, add soy milk, and season with salt and pepper to taste. ladle soup into bowls and garnish w/ tomato and basil.
