Recipe Ingredients for Roasted Corn, Black Bean and Mango Salad

2 teaspoons canola oil
1 clove garlic
1 1/2 cups corn kernels
16 ounces mango
15 ounce cooked black beans, drained
1/2 cup red onion
1/2 cup red bell pepper
3 tablespoons lime juice
7 ounces chipotle peppers
1 1/2 tablespoon fresh cilantro
1/4 teaspoon ground cumin
1/4 teaspoon salt

Recipe Directions for Roasted Corn, Black Bean and Mango Salad

  1. Mince garlic. Peel and dice mango. Drain beans and rinse. Chop onion, red pepper, and cilantro. Drain and chop chipotle peppers.

  2. Heat oil in skillet. Saute garlic 30 seconds, until fragrant. Brown corn kernels, about 10 minutes.

  3. Toss all ingredients into large bowl and serve and room temp.
