Makes 2-1/2 cups. You can also add 1 chopped tomato if you like.

Recipe Ingredients for Roasted Corn and Avocado Salad

1 cup corn
1/2 tsp ground cumin
2 clove garlic, minced, pressed
2 tsp olive oil
1 avocado, cubed
3 tbs lime juice
2 tsp cider vinegar
2 tbs cilantro, chopped
1 salt and pepper, to taste

Recipe Directions for Roasted Corn and Avocado Salad

  1. Preheat the broiler.

  2. Mix together the corn, cumin, garlic and oil in a bowl.

  3. Spread it onto a baking pan and roast about 3 inches from the broiler for about 10 minutes, stirring often (at least 3 times or more).

  4. When the corn in tender and golden brown, remove the pan from the broiler and let cool.

  5. Combine the avocado, lime juice, vinegar and cilantro in a serving bowl.

  6. Stir in the corn and add salt and pepper to taste.

  7. Serve immediately or chilled.
