Recipe Ingredients for Roasted Chopped Veggies

1 cup Mushrooms, Portabella, chopped
1/2 medium Squash, Summer, Zucchini, Includes Skin, chopped
1/2 red bell pepper, chopped
3 T. yellow onion, chopped
1 clove garlic, minced
1/2 t sea salt
1/2 t black pepper
1 T. olive oil

Recipe Directions for Roasted Chopped Veggies

Mix all ingredients together. Spray a sheet pan with oil. Arrange veggies in a single layer on pan. Bake at 400 degrees until tender usually around 15 minutes.
